Orange and Almond Grilled Lake Trout

This is a simple, delicious summer recipe that works great with any kind of trout or salmon.


  • One Trout or Salmon butterflied

  • Two Oranges

  • 1 Cup of Orange Juice

  • 1 Cup of Almonds

  • Garlic Powder

  • Rosemary (Optional)

  • 1/2 Cup Butter

  • Sea Salt

  • Orange Zest


  1. Marinate the fish in the orange juice for at least 30 minutes before cooking. Set the grill to medium/ medium high heat.

  2. Slice the oranges into rounds, zest one of the oranges before slicing. Cut the butter into chunks.

  3. Remove the fish from the marinade and place on tin foil. Sprinkle salt, garlic powder and orange zest over the meat of the fish. Place butter, orange rounds and half the almonds on the fish. If using rosemary add to the inside of the fish.

4. Fold the fish over and top the skin side with more almonds and orange rounds.

5. Top with loose rosemary and wrap up in tin foil. Cook on the grill for approximately 10 minutes.
